About 3 days ago I decided that it was high time that my sweetie and I runaway for a few days. I rented us an adorable little cabin about an hour away from where we live. We didn't get the chance to go to a cottage this summer and as much as I love camping, there's something special about cottaging that I was really missing this year. I have also ALWAYS wanted to stay in a cabin in the fall, purely because of the photoshoot opportunities. I mean, flannel, colourful leaves, fire pits, it doesn't get much better than that.
The place we are staying at doesn't have a stove so I am prepping a lot of the meals ahead of time (also, I don't want to spend anytime cooking, I just want to cuddle by the lake, and then by the fire). One of the things I came up with was this warm fruit bake. My plan is to serve this with cinnamon buns, and probably bacon, as a breakfast. It smells amazing in the oven and tastes delicious as well!
I seriously can not wait for this trip! We leave tomorrow :)

Ingredients
1/2 cup of butter
4 apples (I used MacIntosh)
4 plums
1 1/2 cups cranberries (fresh or frozen)
1/4 cup coconut sugar
Juice from 1/2 a lemon (about 2 tbsp)
1 tbsp arrowroot starch
1 tbsp pumpkin pie spice
Optional
1 cup of pecans
1. Pre heat the oven to 300F
2. Place butter into a sauce pan and melt on med-low heat until the butter turns light brown and gives off a nutty aroma. Remove from heat.
3. Slice apples and plums into 1/8ths and add to a 9x13in baking dish
4. Add cranberries, coconut sugar, lemon juice, arrowroot starch, spices, and pecans.
5. Stir to combine, drizzle the brown butter on top, and mix once more to ensure that the fruit is evenly coated.
6. Place in the oven and bake for 1 hour
Notes:
This can be made a few days ahead of time and reheated before serving.
